9 x 13 baking pan with cooking spray
Preheat oven to 375
Slice veggies 1/8 inch think
Separate onion slices into rings
3 small zucchini
1 medium onion
4 medium tomatoes
Mix together in a bowl & make two layers in the dish like lasagna: zucchini, onion, tomatoes, cheese, repeat
6 T grated parmesan cheese
1.5 cups shredded mozzarella cheese
2 tsp dried oregano
1 tsp garlic powder
6 small red-skin potatoes cut in half - scrub and place around the edges.
Cover and bake one hour, remove cover and bake 15 minutes more.
