Truffle Topped Brownies from Shortcut Cookie Book

1 -package brownie mix
1 stick unsalted butter, melted
1/4 cup water
2 large eggs
2 cups semisweet chocolate chips
1 can sweetened condensed milk
2 teaspoons vanilla extract
1-2 tablespoons unsweetened cocoa powder, optional

Preheat oven to 350 degrees. Position a rack in the lower third of the oven. Spray the bottom only of a 13 x 9 inch baking pan with nonstick cooking spray or foil line pan.

Combine the brownie mix, melted butter, water, and eggs in a medium mixing bowl with a wooden spoon until just blended and all dry ingredients are moistened. Spread batter into prepared pan.

Bake for 20=30 minutes or until toothpick inserted 2 inches from side of pan comes out clean.

During last 10 minutes of brownie baking, prepare topping. Melt chocolate chips with condensed milk in a heavy saucepan set over low heat, stirring until smooth. remove from heat and stir in vanilla.

Remove brownies from oven and immediately spread with chocolate mixture. Transfer to a wire rack and cool completely. Chill for 1 hour in refrigerator to set topping. Cut into bars. If desired, sift cocoa powder over squares. Store in refrigerator.

Double batch for thick brownies.

Chef Deborah's Brownies

2 packages Duncan Hines Brownie Mix
1 package chocolate chips

Mix brownie according to directions. When it comes out of the oven, sprinkle the chocolate chips over the hot brownies, spread and let cool.

Buckeye Brownies

Enjoy this recipe from Classics Brownies Cookbook (M608).

19-1/2 oz. pkg. brownie mix

2 c. powdered sugar

1/2 c. plus 6 T. butter, softened and divided

8-oz. jar creamy peanut butter

6-oz. pkg. semi-sweet chocolate chips


Prepare and bake brownie mix in a greased 13"x9" baking pan according to package directions. Let cool. Mix powdered sugar, 1/2 cup butter and peanut butter. Mix well and spread over cooled brownies. Chill for one hour. Melt together chocolate chips and remaining butter in a saucepan over low heat, stirring occasionally until melted. Spread over brownies. Let cool; cut into squares. Makes 2 to 3 dozen.
